World's Best Chicken Soup recipe

How to make Basic Chicken Soup

8-10 quart soup pot. Add 5-6 qts of water,
Add to the pot..
1 whole chicken or 2 lb chicken breasts and /or thighs (bone in is best)
4 stalks celery chopped
1-2 c chopped carrots
1 large onion chopped
4 cloves garlic, diced/minced
2 Tbs basil
1/4 cup parsley
salt/pepper to taste

Bring to boil. Lower and simmer 3-4 hrs. Remove chicken to cool. De bone and de-skin. Chop up chicken and return to pot.

Can then add one of the following
3-4 chopped potatoes..cook til done
already cooked egg noodles, bowties(farfalle), pastina, matzo balls, rice or cubed potatoes

Top each serving with fresh basil and Parmesan cheese.

To store fresh brick of Parmesan -take a white cotton cloth (Hankie or napkin), soak in Vinegar and wring out. Wrap cheese and put in a ziplock. My Nana Ortenzi did this and it keeps the cheese fresh and from drying out.
